Viticulture is the science, production and study of grapes which deals with the series of events that occur in the vineyard. Duties of the Viticulturalist include: monitoring and controlling pests and diseases, fertilizing, irrigating, canopy management, monitoring fruit development and characteristics, deciding when to harvest and vine pruning during the winter months.
Enology is the science, production and study of wine and winemaking from the time of grape harvest through fermentation, aging and bottling. Enologists have the complex task of turning raw grapes into finished wine.
Viniculture is the integration of the two sciences: grape growing and wine making. Viniculture is a more consistent approach to winemaking as it is the same team that follows the grape from start to finish.
